Maria’s Tzatziki Recipe
(Serves 1 bookstore)
1 big tub of thick greek fat yoghurt
8-10 small firm cucumbers
Lots of garlic
Lemon
Olive oil
Salt
Fresh dill & paprika [greek]/dried mint [cypriot]

Cut out the hearts of your cucumbers. The heart is the wettest bit: you don’t want too much wetness in your tzatziki. Eat the hearts if you like. Chop the rest of the cucumbers into small small chunks in a strainer. Give yourself time to do this well. Speak with friends calmly while you chop. Or enjoy the silent chopping. Sprinkle cucumber chunks with salt. Let the water drain from them for an hour or so, more if possible. You can save the cucumber water that drains and wash your face with it later- very good for skin they say. Then mix cucumber chunks into a big bowl with the yoghurt, crush several cloves of garlic, throw them in too. Add generous amounts of dill/dried mint according to taste. Salt to flavour. Add the juice of half a lemon and some olive oil. Mix it all well and enjoy it all blending. If you’re doing it the Greek way with the dill, sprinkle a little powder paprika on top. Serve with warm pita bread/ carrot/celery sticks, or just eat with big spoonfulls.
